We have a cafe around where I live called Cafe Latte, and they have this amazing turtle cake! I am lucky enough to have their recipe, and so I baked it for my sister's seventeenth birthday. However, I did not have their caramel recipe, nor all the ingredients for their frosting, so I had to make my own.
The cake was moist and extremely chocolate-y, the caramel was sticky and sweet, complimenting it wonderfully, and my substitute thick, creamy, fudge-like frosting was the perfect finishing touch.
Thus, my final product was spiced up with this ooey gooey caramel and a really dee-licious frosting :) Yum.
Cafe Latte's Turtle Cake
1 egg
2/3 cup vegetable oil or olive oil
1 cup buttermilk
2 cups flour
1 3/4 cup granulated white sugar
1/2 cup cocoa powder
1 teaspoon salt
1 tablespoon baking soda
1 cup hot coffee
Preheat oven to 350 degrees F. Grease 3 (9") cake pans. Cover each bottom with a disk of parchment paper. Grease and flour again.
In a bowl, combine egg, oil, and buttermilk. In large separate bowl, mix together flour, sugar, cocoa, salt, and baking soda. Gradually add wet ingredients to dry until well mixed.
Add the coffee a little at a time.
Scrape batter into prepared pans.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake rest in pans for 10 minutes. Carefully turn out onto plates to cool completely.
For the caramel... :)

1 cup granulated sugar
6 tablespoons butter
1/2 cup heavy whipping cream
Make sure to have all of your ingredients measured and ready before you begin, because once you start, the process goes FAST! Also, you may want to wear oven mitts and use a wooden spoon throughout the process, as the caramel does get hot.
Heat the sugar on moderately high heat in a heavy bottomed 2-3 quart saucepan. As the sugar begins to melt, stir vigorously with a wooden spoon. As soon as the sugar comes to a boil, stop stirring and just swirl the pan from this point on. As soon as the sugar crystals are melted, and the mixture is dark amber in color, add the butter and mix until it is melted in.
Once that has occurred, remove from the heat and count to three. Then, add in the cream and stir to incorporate.
As you add the butter and cream, the mixture will foam up quite a bit.
Mix until the caramel sauce is smooth, and then carefully pour into a jar or container. Be extremely careful, as it is incredibly hot!
If you smell any burning immediately remove the pan from the heat and add the other two ingredients as instructed. This could occur at anytime, so be constantly watching the sauce. Also, having a cupful of cold water next to the stove is always good idea ;)
If your caramel does burn, the next time you make it, you can melt the sugar with a half cup of water. It however, will take a little longer, because the water will have to evaporate before the sugar can caramelize.
For Cafe Latte's original frosting recipe...
1/2 cup milk
1 cup sugar
6 tablespoons butter
2 cups chocolate chip
Mix sugar and milk in saucepan. add butter. Bring to a boil. Remove from heat. Add the chocolate chips to to pan. Using a wire whisk, mix until smooth.
Frost and decorate however you like!
