Peanut Butter Cookie in a Cup

YAY! I am so happy! I am back to baking! My so sweet and thoughtful mom bought me a little bowl, so that I could still make some single serving creations (don't you just love them!) using our microwave in our room! I will be posting lots of new microwave delicacies in the future. If you have any recommendations on what I should try next, just shoot me an email or comment :)



Now then, who doesn't love a good, crumbly, sweet, chewy, rich peanut butter cookie?
Well, a while back, I found that No. 2 Pencil had created this SPECTACULAR single serving chocolate chip cookie in a cup recipe. After trying it out {here}, I realized that she had also made a single serving peanut butter cookie! I knew that I had to try it, and was definitely not disappointed! 

Peanut Butter Cookie In a Cup
1 tbsp. butter
1 tbsp. peanut butter
1 tbsp. packed brown sugar
1 tbsp. white sugar
2-3 drops vanilla extract (a splash)
small pinch of salt
1 egg yolk
3 level tbsp. flour

Melt peanut butter and butter together in the microwave for about 30 seconds in a microwave safe container. Add sugars, salt, and vanilla and stir to combine. Add the egg yolk and mix again. Add flour and give the final stir. Bake in the microwave for around 45 seconds, starting to check for doneness at 30 seconds. Serve warm.
