Mini Doughnut Muffins


I love getting a paper bag full of sweet, piping hot, crispy mini doughnuts from the fair. 
Who doesn't?

I discovered this marvelous recipe for mini doughnut muffins. So simple, so scrumptious, so addicting, and SO MUCH HEALTHIER than regular mini doughnuts (they are baked instead of fried). Honestly, I cannot tell the difference.

Mini Doughnut Muffins


FOR MUFFINS...
1/2 cup white sugar
1/4 cup butter, melted
3/4 tsp ground nutmeg
1/2 cup milk
1 tsp baking powder
1 cup flour

 FOR COATING... 
1/4 cup butter, melted
1/2 cup white sugar
1 tsp ground cinnamon

Preheat oven to 375 degrees F. Grease a mini muffin tin with butter or cooking spray. 
In a large bowl combine the melted butter (1/4 cup), 1/2 cup sugar, and nutmeg. Stir in milk, baking powder, and flour, mixing just until combined. Divide batter evenly among prepared muffin cups.
Bake for 15-20 minutes, until the tops are lightly golden. While muffins are baking, mix the sugar, and cinnamon in a small bowl. 
Allow the muffins to cool a bit in the tins, then remove. 
Brush each muffin lightly with butter, and then roll in the cinnamon sugar mixture.

{My muffins only took 12 minutes to bake.}
{Also, if you like, don't brush each muffin with butter before rolling them in the cinnamon sugar- simply roll them straight into the cinnamon sugar.}
